| dc.description.abstract | งานวิจัยนี้มีวัตถุประสงค์เพื่อพัฒนาขนมขบเคี้ยวจากข้าวกล้องไรซ์เบอร์รี่งอกเสริมโปรตีนข้าวไฮโดรไลเสตด้วยเทคนิคการทำแห้งแบบโฟมแมท (foam-mat drying) โดยศึกษาผลของอัตราส่วนข้าวสุกต่อน้ำ (1:1, 2:3 และ 1:2) และปริมาณโปรตีนข้าวไฮโดรไลเสต (2.5-8%) ที่ส่งผลต่อคุณภาพผลิตภัณฑ์ ทั้งด้านกายภาพ (ขนาด สี เนื้อสัมผัส) ทางเคมี (aw ความชื้น โปรตีน สารประกอบฟีนอลิกทั้งหมด แอนโทไซยานินทั้งหมด และความสามารถในการต้านอนุมูลอิสระ DPPH) และทางประสาทสัมผัส (ความชอบและระดับความกรอบ) ผลการทดลอง พบว่า ขนาดเส้นผ่านศูนย์กลางเพิ่มขึ้นเมื่อใช้อัตราส่วนข้าวต่อน้ำต่ำ (1:2) ขณะที่โปรตีนข้าวไฮโดรไลเสตสูงจะทำให้การขยายตัวลดลง อัตราส่วนข้าวสุกต่อน้ำต่ำร่วมกับปริมาณโปรตีนสูงทำให้สีสว่างขึ้น (ค่า L* และ b* สูงขึ้น แต่ค่า a* ลดลง) ความกรอบ ความเปราะ และความแข็งของผลิตภัณฑ์จะเพิ่มขึ้นตามปริมาณโปรตีน สำหรับคุณภาพทางเคมี ผลิตภัณฑ์ที่ใช้อัตราส่วนข้าวสุกต่อน้ำต่ำและโปรตีนข้าวไฮโดรไลเสตต่ำมีค่า aw และความชื้นสูงขึ้น ปริมาณโปรตีนในผลิตภัณฑ์เพิ่มขึ้นตามโปรตีนข้าวไฮโดรไลเสตที่เพิ่ม ปริมาณฟีนอลิกทั้งหมดและความสามารถในการต้านอนุมูลอิสระ DPPH เพิ่มขึ้นตามอัตราส่วนข้าวสุกต่อน้ำและปริมาณโปรตีนข้าวไฮโดรไลเสต ส่วนปริมาณแอนโทไซยานินทั้งหมดขึ้นกับผลจากอัตราส่วนข้าวสุกต่อน้ำเท่านั้น ผลการทดสอบทางประสาทสัมผัสพบว่า สูตรที่ใช้อัตราส่วนข้าวสุกต่อน้ำ 2:3 ร่วมกับโปรตีนข้าวไฮโดรไลเสตร้อยละ 5 ได้รับคะแนนความชอบในระดับดีร่วมกับมีปริมาณโปรตีนสูง จึงเลือกสูตรนี้มาทดสอบเพื่อเปรียบเทียบวิธีอบแห้งแบบเตาอบและอบแห้งแบบถาด จากการทดลองพบว่า ขนาด สี ความแข็ง ความกรอบ ความเปราะ aw ปริมาณความชื้น และปริมาณโปรตีนของผลิตภัณฑ์ที่อบแห้งทั้งสองสภาวะไม่มีความแตกต่างกันอย่างมีนัยสำคัญ อย่างไรก็ตาม ผลิตภัณฑ์ที่อบแห้งด้วยเครื่องทำแห้งแบบถาดมีปริมาณสารประกอบฟีนอลิกทั้งหมดและความสามารถในการต้านอนุมูลอิสระ DPPH สูงกว่าผลิตภัณฑ์ที่อบแห้งด้วยเตาอบ นอกจากนี้ ผลิตภัณฑ์ที่อบแห้งจากทั้งสองวิธีได้รับคะแนนความชอบและระดับความกรอบที่ไม่แตกต่างกัน ดังนั้น จึงเลือกใช้วิธีการอบแห้งด้วยเครื่องทำแห้งแบบถาดในกระบวนการผลิต เพราะยังช่วยเพิ่มกำลังการผลิตได้ด้วย ปริมาณเชื้อจุลินทรีย์ทั้งหมดและเชื้อโคลิฟอร์มของผลิตภัณฑ์ที่ได้จากกระบวนการผลิตไม่เกินเกณฑ์มาตรฐานผลิตภัณฑ์อุตสาหกรรมขนมกรอบจากธัญชาติ (มอก. 1534-2541) จากการสำรวจการยอมรับของผู้บริโภคต่อผลิตภัณฑ์ขนมขบเคี้ยวจากกล้องอกงอกไรซ์เบอร์รี่เสริมโปรตีนข้าวไฮโดรไลเสต จำนวน 120 คน พบว่า ผู้บริโภคร้อยละ 98.3 ให้การยอมรับและต้องการซื้อผลิตภัณฑ์สูงถึงร้อยละ 90 ดังนั้น ผลการทดลองนี้น่าจะเป็นทางเลือกหนึ่งในการผลิตขนมขบเคี้ยวเพื่อสุขภาพ เนื่องจากผลิตภัณฑ์ที่ได้มีโปรตีน ไขมันต่ำ และไม่มีคอเลสเตอรอล นอกจากนี้ยังเป็นแนวทางในการเพิ่มมูลค่าให้กับวัตถุดิบทางการเกษตรได้ | en_US |

| dc.description.other-abstract | This study aimed to develop a snack from germinated riceberry rice enriched with rice protein hydrolysate using foam-mat drying. The effects of rice-to-water ratios (1:1, 2:3 and 1:2) and rice protein hydrolysate levels (2.5-8%) were investigated on the snack's physical properties (size, color, texture), chemical compositions (aw, moisture, protein, total phenolic, anthocyanin contents, and DPPH antioxidant activity), and sensory attributes (preference and crispiness level). The results demonstrated that product diameter increased as rice-to-water ratios decreased, while higher levels of protein hydrolysate led to reduced expansion. A lower rice-to-water ratio combined with elevated rice protein hydrolysate content resulted in a brighter color, indicated by higher L* and b* values and a lower a* value. Additionally, this combination between rice-to-water ratio and rice protein hydrolysate content enhanced the product's crispiness, brittleness, and hardness. The results showed that there were no significant differences in size, color, hardness, crispiness, brittleness, aw, moisture content, and protein content between the products dried in an oven and those dried using a tray dryer. However, the products dried with the tray dryer had higher total phenolic compounds and DPPH antioxidant activity compared to those dried in the oven. Both drying methods yielded comparable scores for sensory attributes, including preference and crispiness scores. Consequently, the tray drying method was selected ง for the production process due to its potential to enhance production capacity. The total microbial count and coliform levels in the products obtained from the production process were within the permissible limits as Thai Industrial Standard for Cereal-Based Crisp Snacks (TIS 1534-1998). According to a survey on consumer acceptance of the germinated riceberry rice snack enriched with rice protein hydrolysate, conducted among 120 participents, 98.3% of the respondents accepted the product, and 90% expressing a willingness to purchase it. Thus, the findings suggest that this approach can serve as an alternative for producing healthy snacks, as the resulting products are high in protein, low in fat, and cholesterol-free. Additionally, it provides an opportunity to enhance the value of agricultural raw materials. | en_US |
